JUSTINA EODICE
Special to The Leader
Ready in 15 minutes.
Serves around three to four people.
Ingredients
- 2 avocados
- 2 tbsp lemon juice
- 2 tsp salt
- 2 tsp pepper
- 2 tbsp diced white onion
- 2 tsp crushed garlic
- Tortilla chips of your choosing
(for a healthier option try lightly salted)
*Don’t be afraid to add any extra seasonings you like! I like to add a little Tajín to add a little spice to it.
Preparation
- Cut avocados in half. Dice and place in a medium sized bowl.
- Add in your diced onion, lemon juice and seasonings to the bowl.
- Mash together until desired consistency
- Grab your tortilla chips and serve
(I found that if you refrigerate it for at least 30 minutes it tastes best.)
Since becoming a vegetarian in my early teens, I’ve learned that cooking is a fun and diverse hobby that anyone can do.
I had to learn how to change my diet completely in a healthy way, and even now, I still research how to be a vegetarian to ensure I am getting the proper protein I need in a plant-based diet.
Don’t worry, this isn’t one of those “Oh my gosh you totally need to go vegan” columns; a lot of the recipes I will be making will have an option to add meat.
Being on a budget in college often leads people to fall into the stereotypical unhealthy lifestyle, but there are many ways to live a healthy lifestyle on a budget.
We are going to be going on a culinary journey of trying new recipes and implicating new mindsets to promote a better wellbeing.
Honestly, after the year we have all had, I think it is safe to say that we deserve to take care of ourselves!
Self-care isn’t always about spa days or going out and spending a ton of money on yourself.
Sure, those things are really nice, and every now and then, it is just what we need.
But self-care can be something as simple as routine. I am learning that developing a day-to-day routine and trying my best to stick with it is going to be a huge part of living a healthier lifestyle.
Easing myself into a higher functioning adult lifestyle is definitely no walk in the park. However, taking it one day at a time is the key to it.
Making sure I fuel my body with nourishments that will keep me motivated to do my daily tasks around my house as well as balancing a new job and schoolwork.
Due to my semi-busy schedule, I really like this recipe because it is super easy to make and I can make it before class, and by the time I am done it is ready! It’s also a good recipe to practice and perfect by adding your own twist.
Once COVID-19 is over, you can have a ton of new recipes to show your friends and family.
I mean seriously, who doesn’t look at a bowl of freshly made guacamole and think, “Wow, an extremely successful, high functioning adult must have made that.” So try it out and email me at eodi0614@fredonia.edu if you have any requests for your favorite recipes.
